Thanksgiving is this week, Christmas is around the corner and I’m gaining weight! It’s part of the holidays right?! What is holiday baking without a little weight gain! ; ) Today I have a festive Holiday 7up Pound Cake Recipe for you. This is great for thanksgiving, because you can just drizzle your Cranberry Sauce that you already made right on top! It also makes a great dessert to bring to holiday parties, work gatherings, or basically anything to keep you from eating the entire thing…. it’s that good! : ) So put on your apron and get out your bowls, it’s time for a little holiday baking!

7up Pound Cake Recipe

This recipe is a family favorite. I remember eating this as a child at my granny’s for Thanksgiving and Christmas. Ok, maybe we would eat it even if there wasn’t a holiday too. But it’s just so good!


To make this you will need some butter. I use my all time favorite, Land O’ Lakes. I also always make sure to get unsalted, because to me you can tell a difference when baking.

Ingredients

Scale

Pound Cake

  • 3 sticks of butter (room temperature)
  • 3 cups of sugar
  • 5 eggs
  • 3 cups all purpose flour
  • 2 tsp vanilla
  • 1 TBS fresh lemon juice
  • Zest of one lemon
  • 12 oz bottle 7up

Cranberry Topping

  • 1 cup of water
  • 1 cup of sugar
  • 12 oz fresh cranberries

Instructions

Pound Cake

  1. Preheat oven to 325 degrees
  2. Cream butter and sugar
  3. Then mix in eggs one at a time and beat well
  4. Add the flour gradually
  5. Next add vanilla, zest, and lemon juice
  6. Slowly add 7up and combine well
  7. Pour mixture into a greased and floured bundt cake pan and smooth out the top
  8. Bake for 1 hour and 10 minutes or until done
  9. Let the bundt cake stand for 20 minutes after removing it from the oven
  10. Then invert the cake on your serving plate.

Cranberry Topping

  1. While Baking the cake, boil the water and sugar
  2. Add cranberries and bring back to a boil
  3. Simmer for 10 minutes
  4. Using a fine mesh strainer, strain cranberries to remove the whole cranberries and seeds
  5. Drizzle sauce over a slice of 7up pound cake
  • Prep Time: 15 mins
  • Cook Time: 1 hour 10 mins

The Cranberry Topping is totally optional. You can choose to drizzle it over each individual piece, or drizzle it over the whole cake. I’ll leave that up to you! ; )

    Unfortunately I have a problem with this cake :( It smells so delicious, but it is in my oven for 1h and 40 mins and is still not cooked inside :( I think it might be because of too cold butter…

      Hi Ela, I’m so sorry you are having problems! It could be the butter, but I’m not entirely sure. It is a very moist cake. An hour and 40 min should be efficient enough. I would take it out and let it cool. If you send me a picture of the inside I might have a better idea. Did you use only 12 oz of the 7 up? I’ve never had a problem with the recipe and we have made it since I was a kid so I’m not sure what it could be, but a picture might help me figure it out with you!         I’ll try to take picture tomorrow and send you by e-mail. I’m sure that I’ll try to make this cake again before Easter because it looks really delicious on the inside (still I had to decrease the water in cranberry sauce and add some gelatine because it was too watery).           Sounds good. Are you putting the cranberry sauce in the cake batter? That is actually just a topping. Maybe that’s what caused it? If not I’ll be making this again to check my recipe! lol

            Of course I put it only on the outside of the cake ;) I have baked a few pound cakes before and I know that this cakes are delicate. The cake inside was all cooked, but it was really heavy, it was a trully sad layer, but still everybody was eating and commending this cake and the cranberry sauce (even if it was a little bit watery ;) ). As I said… I’ll defenitely try to make it again this month and I’ll tell you how it went this time. Thank you anyway ;)

      Ella, the reason you are probably having to bake your cake an awful long time is because you put TOO much 7UP in it. I have never saw a 7UP cake recipe that call for 12 ounces of 7UP. The amount is never over 8 ounces. The 7UP soda site is the site of the original 7UP cake and the recipe there calls for 3/4 cup of 7UP. I always put 1 cup in my cake. You can put more than 3/4 but I would never advise over 1 cup. I guarantee if you put 3/4 or 1 cup of 7UP you cake will bake in no more than 1 hour and 20 minutes. 12 ounces is way too much soda. Hope this helps.

    Can’t wait to try this! It’s in the oven now! We always made this when I was a little girl! I noticed on previous comments that someone had trouble with this recipe. When I went back and reviewed it on Pinterest, I noticed that when I first clicked on recipe, before getting onto your website, it’s lists ingredients. It lists one cup of water as an ingredient. I’m sure this is for the cranberry topping, but the rest of the recipe is cut off. Perhaps this is what she saw?

      We have made this recipe for years and have never had a problem, so I am not sure exactly went wrong with that situation. 7up pound cake is a heavier dessert, but I think that’s why they call it a pound cake ;) I hope you had great success, we would love to know your thoughts.
