This homemade coconut simple syrup is perfect for co*cktails, iced coffee, tea and desserts. This recipe is so easy, you will never buy simple syrup again! In this guide I include variations for making coconut simple syrup with honey or maple syrup (paleo) and I share a keto friendly alternative!

I’ve been making my own simple syrups for some time now and really love how easy they are to make. I use them often for my morning coconut matcha latte and in my coconut iced coffee.

Recently, I tried a coconut latte from the coffee shop and fell in love with the soft coconut flavor that the beverage had from the coconut simple syrup. I decided that I needed to make this simple syrup at home for my homemade coffee, treats and co*cktails. Below you’ll learn how to make coconut simple syrup with sugar, honey and erythritol. Each variation has a slightly different flavor from the other, but they are all solid choices for adding coconut flavored syrup to your drinks.

Coconut Simple Syrup Ingredients

  • 1 cup sugar (or equal parts honey or erythritol)
  • 1 cup water
  • 1/2 cup shredded coconut (you can also take a deeper dive on shredded coconut – how to find the right stuff to buy, how to make it, etc.)
  • (optional) 1/2 teaspoon coconut extract
  • (optional) 1/8 teaspoon xanthin gum to thicken the keto version

How To Make Coconut Simple Syrup

For this recipe you will need 1 cup of water, one cup of organic white sugar, and 1/2 cup of unsweetened shredded coconut. You may also add a 1/2 teaspoon of coconut extract if you’d like to add more coconut flavor to this syrup.

Start by bringing the water to a simmer in a medium saucepan over medium heat. Add in the sugar and shredded coconut and allow the mixture to gently simmer for 3-5 minutes. Once the sugar dissolves and the coconut has simmered in the syrup for at least 2 minutes, remove the pan from the heat and allow it to cool.

Then, use a mesh strainer and pour the simple syrup through the strainer into a container. Reserve the sweetened coconut for desserts or baking. You can also dehydrate the sweet flakes to make sweetened coconut flakes!

Variations:

Paleo Coconut Simple Syrup

This method uses honey or maple syrup to sweetened the simple syrup. For this method you will simmer 1 cup of water with 1 cup of honey in a small saucepan. Add in the 1/2 cup of shredded coconut and simmer and turn off the heat. Let the mixture sit until it cools.

Strain the coconut from the syrup and store the syrup in a mason jar or airtight container. Use for your favorite paleo tropical co*cktails!

Keto Coconut Simple Syrup

This method uses erythritol to sweetened the simple syrup. If you’d like the syrup to thicken, you will need to add a thickener like xanthin gum. For this method you will simmer 1 cup of water with 1 cup of erythritol in a small saucepan. Add in the 1/2 cup of shredded coconut and simmer. Once the sugar dissolves, add in the xanthin gum and whisk vigorously. Once the xanthin gum is dissolved, remove the pan from the heat and let the mixture cool.

Strain the coconut from the syrup and store the syrup in a mason jar or airtight container. Use for your favorite keto hot or cold drinks.

FAQ

How do you make a rich simple syrup with coconut?

Rich simple syrups are traditionally sweeter than simple syrup. To make rich simple syrup you will follow the recipe, but you will use two cups of sugar instead of one. Make sure to simmer the liquid long enough for all the sugar to dissolve.

Can you substitute white sugar with other natural sugars?

Yes! I’ve made simple syrup with coconut sugar, date sugar, and raw sugar and all tasted wonderful. Note that coconut sugar will make this simple syrup very dark in color.

Can I double this recipe?

Yes. Use two cups water to two cups sugar and one cup of shredded coconut. Then follow the instructions as written in the recipe card below.

Ingredients

Instructions

  1. Use a small-medium size sauce pan and bring the water to a boil over medium heat.

  4. Once cooled, strain the coconut from the syrup and pour the coconut simple syrup into a jar or container.

Store the syrup in the refrigerator for up to a month.

Variations:

Paleo: Follow the instructions as written, but substitute honey or maple syrup in place of the sugar.

Keto: Follow the instructions as written, but substitute erythritol in place of the sugar and add in 1/8 tsp of xanthin gum to the mixture after the sugar dissolves. Whisk in the xanthin gum and stir until it dissolves. Remove the pan from the heat and let the mixture cool.
