Peppermint Gingerbread Cake Ball (Ebleskiver) Recipe

Two of my favorite Christmas season cookies are gingerbread and Danish pancake balls called ebelskiver (it is pronounced able-skeev-er and spelled three different ways in English – ebleskiver, ebelskiver, aebleskiver because Danes like to complicate things sometimes.)

There are many varieties and recipes for making ebleskiver. Since gingerbread is also a Danish Christmas tradition I'm going to combine the two and make gingerbread ableskiver!

With peppermint candy chips. Because peppermint candy makes everything Christmasy and better.

The only special skills you need to make this Scandinavian treat is a stove topDanish Aebleskiver / Ebelskiver pan like this one. I use an electriccake pop maker similar to this onewhich makes it even easier! (Disclosure: I am including affiliate links in this post for your convenience)

Gingerbread Cake Ball Recipe


You will need the following ingredients


1 Cup of white flour

1 1/2 Teaspoons of sugar

1/2 Teaspoon of baking powder

2 Teaspoons of ginger

1 Teaspoon of cinnamon

1/4 Teaspoon of nutmeg

1/4 Teaspoon salt

2 Eggs

1 Cup of milk – I substitute almond or soy milk (basically whatever is in the fridge) to make this a milk allergy friendly dairy free treat recipe

1/2 Cup of unsulfured molasses

2 Tablespoons of melted butter – Again I switch this out with whatever brand of dairy free butter is in the refrigerator at the moment

Extra melted butter or neutral tasting cooking oil or spray

Peppermint Gingerbread Icing Recipe

You will need the following ingredients

Peppermint candy chips

1 Cup of confectioner’s sugar

2 Teaspoons of water

1/2 Teaspoon of vanilla extract

Pastry bag and tip like this one


Step by Step How to Make this Recipe

1. In a large mixing bowl stir to thoroughly combine the flour, sugar, baking powder, ginger, cinnamon, nutmeg, and salt.

2. In a separate bowl (yes it is important to the taste of this recipe to do this step in a separate bowl) stir to thoroughly combine the 2 egg yolks, milk, molasses, and melted butter.

3. Stir to toughly combine the wet mixture from Step 2 into the dry mixture from Step 1.

4. In a separate bowl (again this is important) whisk the 2 egg whites until they form peaks.

5. Gently stir the egg whites into the batter mixture (this is called folding in fancy baker talk.)

6. Preheat the cake pop maker or Ebleskiver pan. Using a pastry brush (it looks like this,) brush each well with melted butter or cooking oil/spray.

7. Fill each well with about 1 tablespoon of batter. My cake pop maker suggests using a pastry bag or a zip lock with the corner cut off. I used a clean coffee scoop. The coffee scoop was easier than rocking the pastry bag.

This batter looks lighter in this photo because I am reusing a photo from a traditional ableskiver recipe I wrote on Lazy Budget Chef.

8. Bake the gingerbread balls for 3 to 5 minutes or until softly set and lightly brown on the bottom, turn the cake balls over, and bake them for approximately 3 more minutes or until they are done.

Traditionally Danes turn ebelskiver over in the pan/cake ball maker with a knitting needle or an ebleskiver turning tool that looks a lot like a bamboo skewer. Since I don't knit I use either a chopstick or the fork like tool that came with my cake pop maker.

9. Make the icing by thoroughly combining in a mixing bowl the powdered sugar, water, and vanilla extract.

10. Use a pastry bag and icing tip to decorate the gingerbread cake balls and top with the peppermint candy chips.
