This year is my 2nd time of doing “Asian at Home Holiday” special recipes!
This year, I brought amazing Zesty Prime Rbis recipe!

I just came back home (California) from traveling all the Asian counties. What an experiences of Korea, Japan, Thailand and Vietnam!! Can’t wait to share all the stories, food and inspirations I’ve got from the long trip to Asia!!

I’m very happy to be home and spend Christmas and New Years Eve at home, but sadly…

Jacob is stil in Korea doing his mission (He’s in U.S Air Force).

Please keep him in your mind and pray for him to come home safe and sound!!

Wish I could make this zesty prime ribs for Jacob this year, but I have to wait to make this amazingly perfect prime ribs for him until January 2018.

I got my prime rib cut form Costco, they have amazing deal for great deal for this huge piece of meat.
I purchased this 7.11 lb prime ribs only around $63.92.
It’s only $8.99 per pound for this beautiful piece of beef! Such an amazing deal!!

I took out prime ribs from the refrigerator to my kitchen counter 10 hours before cooking to bring it room temperature.
You CAN NOT skip this part, if you don’t do so, this recipe won’t work.
For even beautiful pink color prime rib, this is the MUST STEP.

Next, let’s work on the buttery rub, Asian at Home style!

Since we have lots of cooking going on during the holiday, let’s use food processor instead chopping everything by hand. 😉
So in a food processor, add garlic, shallot and cilantro and pulse a few times.

Then mix with melted butter, fish sauce, some lime juice, salt and pepper. Yes, you read it right, fish sauce. 😉
Don’t worry if the dinner will be fish without suing seafood, because when the fish sauce roasted with beef and other seasoning… It just become marvelously delicious!!!
Trust me on this!

In a roaring pan or large cast iron pan, place the room temperature prime ribs. You don’t really need a rack because the bones on the bottom will the same function as a rack. I used my cast iron pan, because it was perfect size and so much easier to make gravy after all with all the juice from the prime ribs.
Place all of the roasting vegetables around and bottom of the pan and coat the prime ribs evenly with the butter mixture.Remember, your hand is the best tool in the kitchen!

We are going to roast the meat in 500 degrees preheated oven.
How long?
Here is how to figure out the cooking time.

Prime Ribs Weight x 5 = Cooking Time

Mine was 7.11 so multiply 5 is… 35.55 and this is my cooking time.

I cooked 35 minutes and it turned out amazing as you saw the first picture of this post!

But wait, we are not done cooking the meat.

After cook the require time that you measured (My case, 35 minutes for 7.11 lb bone-in prime ribs.), turn off the oven and let it sit in the oven for 2 hours. DO NOT open the oven door.

I know you are dying to see the beef, but be patient and wait for 2 hours!
The heat in the oven need to come down slowly for the perfect prime ribs.

This 2 hours gap is the perfect time to prepare all the side dish that you want to serve with the prime ribs. I recommend Spicy Stir Fried Long Beans and Honey Butter Smashed Potatoes.

Finally, after 2 hours of painful waiting, OPEN THE OVEN!!! lol! And remove primes ribs from the oven and take the meat out from the pan. Remove all the solid ingredients from the roasting pan and burnt bits. You know what we’re trying to do here… Yes, you’re right! Making gravy!!!

Bring it to a stove and turn the stove over medium heat. Whisk in flour and cook it for 1 to 2 minutes.

Pour water while whisking into the pan. Bring it to soft boil then reduce heat to low and let it simmer 5 to 10 minutes or until the consistency is perfect to your taste.

Finally, remove bones from the meat and slice as desired and serve with your favorite side dishes and gravy. Enjoy!

Ingredients

  • 7 lb. bone-in prime ribs

For the Buttery Rub

  • 20 to 25 cloves garlic
  • 2 small or 1 large shallot
  • handful of cilantro
  • 1 cup melted unsalted butter
  • 1/2 cup fish sauce (Recommend 3 crabs brand)
  • fresh juice from 1 lime (Optional. If you want more richer flavor, skip lime)
  • 2 Tbsp salt
  • 2 Tbsp black pepper

For the Roast Vegetables

  • 1 bulb garlic, cut into halves
  • 1 red onion, cut into quarter
  • 2 small carrots, cut into halves

For the Gravy

  • 8 Tbsp all propose flour (Plus more as needed)
  • 4 cups water

Instructions

  1. Bring the prime ribs to room temperature by place on a kitchen counter at least 6 hours before cooking.
  2. Preheat oven to 500 degrees.
  3. In a food processor, add garlic, shallot and cilantro for buttery rub. Pulse a few times or until the vegetables are finely chopped but not pasty.
  4. Add the chopped vegetables into melted butter along with fish sauce, lime, salt and pepper. Combine well.
  5. In a roaring pan or large cast iron pan, place the room temperature prime ribs. (Do not need a rack.) Place all of the roasting vegetables around and bottom of the pan and coat the prime ribs evenly with the butter mixture.
  6. Roast prime ribs for 35 minutes* in the preheated oven. Then turn off the oven and let it sit in the oven for 2 hours. Do not open the oven door.
